Whole 30 day 18-20.. went to the summer cabin for the weekend.

Still doing a the whole30, however this weekend i did “cheat” on saturday when I went to a dinner we were invited to. I had some wine and sauce to the fish that was served. On Sunday evening on our way home I also ended up having kabob with rice and creamy garlic sauce ( i thought they were going to give me the tomato sauce). It was very interesting because I felt a difference really fast in my body. It is strange how quickly I can feel a difference. I will continue to do the whole 30, and even if i will not have done it 100 % correct I still feel like it’s been fantastic and I still have some days to go. I don’t feel like a failure, and no one should just because things didn’t go like planned. We just need to continue to do the best we can and not give up 😀

20150607_133836

I often eat breakfast on the go and my favorite go to breakfast that is easy to have on the go is a smoothie with boiled eggs. And sometimes I make some kind of porridge (buckwheat, millet, nut) I don’t eat oatmeal, a chia pudding. Something in a jar making it easy to take with me.

Easy mayo recipe

  • 1 egg
  • 1 tsp lemon juice
  • 1 tsp vinegar ( i used apple cider vinegar)
  • Salt and pepper

Place the egg in a high cup, i used the one that comes with the hand blender. Putt in the seasonings and lemon juice and ACV pour over the oil and let sit for a little bit. Then place your hand blender over the egg and start it without moving it for about 30 sec to 1 minute. Then start moving it slowly up and down til the mayo is finished.

Whole30 day 6 and 7, week 1 done. And yes another recepie up :D

Today me and one of my friend went on a long walk with some hills and pushing a stroller about 7 km (4.4 miles), I was completely beat. But I had no time to take a nap before work. Just enough time to eat some lunch and prep my dinner. So I can’t wait for this workday to be over and go home and sleep.

Yesterday and today went by smoothly still have no sugar cravings, which is fantastic cause they suck hahaha. I decided to not have any cacao in anything I make just to make sure I don’t trigger any cravings. I live having cacao in my smoothies or bullet proof coffee. Yesterday I had a super yummy creamy smoothie for breakfast. I think I will make it tomorrow too.

Day 6:

  • Dinner: Cucumber sandwich stuffed with turkey sandwich meet, homemade mayo, salad and tomato
  • Snack: Leftover creamy smoothie from the morning, and bananas topped with almond butter, nuts and shredded coconut.

I’m embarking on a 30 day paleoish cleaneating challenge…today is day 2 :-) and a smoothie recipe!!

Hi i have been slipping for some time now. I have been eating to much of foods my body does not agree with. Like dairy (mainly cheese), sugar (in sweets, coffiee drinks, icecream etc.), processed food (chips, fries, etc.), even some gluten though extremely small amounts. And my body have been telling me to stop but i have ignored it. Now it is time to stop and get back on track eating in a way my body deserve. And for me to do that i need to challenge myself, i stay on track when i do. It is also a great way to kick start change and creating good habits.

My 30 day challenge will consist of paleo food, vegetarian food and raw food. That’s why i called it a paleoish clean eating challenge. And as always preparing and planning is the key to stay on track. Yesterday on day 1 i ate a delicious smoothie with eggs for breakfast, recipe below. For lunch i met up with a friend and had a salad topped with shrimp, snack was the same as my morning smoothie. For dinner i had salmon with oven baked sweetpotato.

Moist Blueberry Banana Mug Cake and Raspberry Mango Smoothie

It’s been a minute since i posted something, been very busy and focusing on other parts of my life 🙂 I saw a picture on insta gram this morning of a mug cake with blueberries. No recipe attatched to it. But it made me go OMG i want this for breakfast today. So I made this super moist blueberry banana mug cake. WOW sooooooooo good. Yummy yummy yummy. I have tried different recipes and they have always ended up dry, but this one is ooey gooey 😀 For breakfast it was a little too sweet for me, my blood sugars spiked hahaha. So note to self next time I will leave out the sweetners.

I am still doing my dmotiv8tor challenge, yesterday I completed week 8. I am a little behind because I have been sick on and off. But I am determined to finish it, it will just take a few weeks longer then planned 🙂 I am so sore from yesterdays workout 🙂 I did day 5 legs and day 6 back before I went to work. So today will be a rest day.

Whole30 day 6! Didn’t go as planned

Hiiiiii i had a lovely day today. I slept in, i guess my body was still tired. Woke up made breakfast, then i was cleaning. The process is boring, yes cleaning is boring, but the result is always the same I feel liberated.
After that i prepared breakfast and lunch for tomorrow.  I will be at church volunteering from 7.30 till about 14. So i made some on the go foods. Can’t wait to eat some 🙂
Tonight i was invited to one of my dear friends for a girls taco night 🙂 it was great seeing these girls chatting and eating. I love spending time with great people. I did end up cheating some and I don’t regret it or sweat it, I will prolong my Whole30 with a few more days to complete a whole30 without cheating. But to sum up my day in one word lovely 😀

Banana Choco Cinnamon Pancakes!!!! OOOOHHHH sooo delicious

Wednesday I went out in the sunshine walking/jogging and tomorrow sunday I will go to the gym for some cardio. I am going slow taking it one step at the time. Want to get the consistency in, build a habit 😀

Quick Dinner :D

I had a lovely day today. I went to church and it was really good. I love Hillsong Church Stockholm. It took me some time to find a church when I moved back to Stockholm. I really love my church in LA Hope’s House and it was hard to leave and find another church home. However I did found one in Hillsong, I am happy. After church I went to eat with my lovely Josefin Pettersson, she is such a wonderful person supportive and just plane awesome.

Back home I wanted to make some quick food and made a mini 2 egg shrimp kale tomatoe omelette. So satisfying and filling. This works just as well as breakfast or lunch too 😀

Nut meal (nut porridge)

I was really hungry this morning and wanted something fulfilling. I decided to make nut no-oatmeal since I don’t eat oats. And it sure filled me up and gave me lots of energy. I found this recipe on sockertjocken.se I changed it up a little.

2013-10-29 11.47.06

Recipe:

For one person

  • 1/4 cup walnuts
  • 1/4 cup almond
  • 1 tbsp pumpkin seeds
  • 1-2 tbsp whole flaxseed
  • 0.5 tsp cinnamon
  • 1 tbsp coconut sugar
  • 1/4-1/2 cup coconut
  • 1 egg

Toppings

  • Blueberries
  • Pomegranate
  • Coconut milk

Directions

  1. Run the almonds, walnuts and pumpkin seeds in blender. Make sure it is minced not flour consistency.
  2. Then pour this down in a dry frying pan, add flaxseeds and roast it. When done, mix the cinnamon and remove the pan from the heat.
  3. Whisk together the coconut milk, eggs and coconut sugar separately.
  4. Then pour this down into nut mixture. Put the pan on the stove and stir in the porridge all the time. Otherwise, it may become scrambled eggs porridge, and that we would rather not. Of course when you get the desired consistency of porridge.

Sweet and Savory Brunch

Wow this brunch was soooo delicious!!!! Had the perfect balance of sweetness and savory flavors that blended well together. Wish I had made more hahaha. People ask me how I find my recepies that I don’t create myself. A lot of times when I can’t figure out what to eat I search on google for recepies and inspirations. I always put PALEO infront of the search term to find paleo recepies. E.i. paleo breakfast or paleo chicken etc. I always find a lot of options to look through.

This morning I searched for paleo brunch and I found these two different recepies that looked so great I wanted to try them out. The first one was Strawberry Shortcake recepie and the second was Perfect Scrambled Eggs recepie where I found the Gordon Ramsey video. Easy to follow 🙂

  4. In a large bowl, combine the almond flour, baking soda, and cinnamon. Using a fork or knife, cut the butter into the almond flour to form and mix, so that you’ve formed some small beads of the butter in the dough.
  5. In a separate bowl, whisk together the eggs, honey, and vanilla. Stir the wet ingredients into the dry.
  6. Using a spoon or measuring cup, drop the dough onto the sheet pan into 8 evenly sized cakes, leaving room in between each cake.
  7. Bake for 15–20 minutes until golden brown.
  8. Allow cakes to cool, then slice horizontally, and spoon some of the strawberry or berry mixture into the middle, and some extra on the side.

Perfect Scrambled Eggs

2013-10-19 11.09.01

  • 3 eggs
  • Some butter or coconut oil
  • Salt and pepper
  • 2 large mushrooms
  • 2 handfull of spinach
  • 1 tomato
  1. Prior to placing the saucepan on the stove, crack the eggs into the saucepan and add the coconut oil to the saucepan as well.
  2. Place the saucepan on medium heat and start stirring so that the eggs get broken up.
  3. Keep stirring without stopping.
  4. Move the saucepan off the heat when you start to see some of the egg sticking a bit to the bottom of the saucepan. Keep stirring off the heat for about 10 seconds and then put it back onto the heat for another 20-30 seconds, but always keep stirring.
  5. Do this three or four times until you see that the mixture becomes more solid (but don’t wait until it’s actually solid!).
  6. Once the eggs have solidified a bit, take the pot off the heat permanently.
  7. Lastly, season with salt and pepper.
  8. Sautee the muschroom, spinach and tomato.
