Whole30 day 10-14 done.. still going strong :) New simple yummy recipe up!!!

Wow 2 weeks of my whole 30 has already passed and i am still going strong. It feels great to be eating clean, however i do miss having some paleo treats. So for my birthday coming up next month I will make a paleo party for my family and friends. I can’t wait 🙂

Went out dancing to a salsa club saturday with a few friends and it was fun, i am not used to wear heels anymore so my feet were killing me after a few hours hahaha. I love wearing heels so I guess I need to try to wear them more 😀 I must have missed the memo about it being a black/ white party. Almost every person in the club had a black or white top on hahaha. Oh and you can’t go out without taking the mandatory bathroom picture 😀

  • Dinner: Parsnip, carrot, turnip mash with beef patties, lingonberries
  • Evening snack: Berry smoothie topped with buckwheat flakes, sunflower seeds, shredded coconut and walnuts

  • Dinner: Ate out had a salad

  • Dinner: Sweet potato fries,  pork chop with garlic parsley butter and bearnaise sauce

  • 1 tbsp coconut oil

Whole30 day 3-5 done whohooo :D a new brekfast recipe up!

Helloooo 😀 The Whole30 is going great and I feel good. I’ve had some busy 3 days with work, friends and having fun. Went to pick blueberries on friday with my friend. We got these berry pickers which made it a lot easier to pick the blueberries. However we didn’t like the surprise of spiders, ticks and some other creepy crawly things that came with it hahaha. We will go out again next week to get some more blueberries before the season is over.

I also changed gyms yesterday, or I quit my old on friday and signed up at a new gym yesterday. A lot of my friends go to this new gym so now I will join them. I think it will help me and motivate me to go to the gym more often, also we can push each other too.

So on thursday I tried a new breakfast and it was very good. I had it for breakfast for 3 days it was that good. I could probably eat it for a few more days. But I decided to not do that it might get boring then hehehe

  • Snack: Banana with almond butter and cactus fruit ( dragon fruit) topped with nuts and shredded coconut.

Day 4 food

  • Lunch: Carrot/ turnip/ rutabaga/ leek soup
  • Dinner: The yummy burger I had on wednesday Portobello mint burger

Day 5 food

  • Breakfast: Blueberry coconut omelette
  • Oven baked ground beef filled belle peppers with a salad

Blueberry coconut omelette

  • 3 eggs
  • 1/4 cup coconut milk
  • 1 tbsp cinnamon
  • 1/4 tsp cardamom
  • 2 tbsp unsweetened shredded coconut
  • Coconut oil for cooking

Mix together and put coconut oil in the pan. Put on medium to high heat and pour in the mixture, let cook for 3-4 minutes before adding the blueberries. Then cook for another 7-10 minutes. I flipp mine over and cook on the top side too because I don’t like it to bee too gooey. I also used 2 small egg pans instead of a large pan.

Day 3 on my challenge..but my post are a day behind cause of my new job :)

Hi so today I’m embarking on day 3. But since I work from 5pm – 12am this week I post yesterdays foods that I ate 🙂 Yesterday ended up being a vegeterian day which was fantastic. I love to switch it up. I also believe that as mainly a paleo eater you are some days supposed to be all vegeterain. I beleive that back in the paleolithic times they ate meat when they had been out hunting and the days they didn’t have meet they ate vegeterian. This is just my own thughts about this. Can’t know for sure 😉

For breakfast I had millet flakes meal topped with berries, that recipe will be up tomorrow. For lunch and dinner I had chickpea and carrot patties, recipe below. Snack I had apple and banana and a raw food bar.

Recipe:

Chickpeas carrot patties

  • 1 tetra box or can of chickpeas
  • 1 medium carrot
  • 1 small onion
  • 1-2 cloves garlic
  • 1 egg
  • 1-2 tsp arrowroot flour (tapioca or coconut works too
  • 1 tsp cummin powder
  • 1 tsp tumeric powder
  • Dash of chill powder
  • Salt and pepper to taste
  • Coconut oil, ghee for frying
  1. Rinse the chickpeas, chop the onion and garlic
  2. Put in a food blender and blend till a grainy consistency not smooth. Put in a bowl.
  3. Shred the carrot and add to the mixture with the egg and seasonings.
  4. Mix well and create balls and flatten them out to patties on a cutting board.
  5. Fry the patties on low to medium heat for 3-4 minutes on each side. Til they get a little color.
  6. Serve with sides of your choice. I used ovenbaked sweet potato, guacamole and salad.
  7. Enjoy!!!!

 

I’m embarking on a 30 day paleoish cleaneating challenge…today is day 2 :-) and a smoothie recipe!!

Hi i have been slipping for some time now. I have been eating to much of foods my body does not agree with. Like dairy (mainly cheese), sugar (in sweets, coffiee drinks, icecream etc.), processed food (chips, fries, etc.), even some gluten though extremely small amounts. And my body have been telling me to stop but i have ignored it. Now it is time to stop and get back on track eating in a way my body deserve. And for me to do that i need to challenge myself, i stay on track when i do. It is also a great way to kick start change and creating good habits.

My 30 day challenge will consist of paleo food, vegetarian food and raw food. That’s why i called it a paleoish clean eating challenge. And as always preparing and planning is the key to stay on track. Yesterday on day 1 i ate a delicious smoothie with eggs for breakfast, recipe below. For lunch i met up with a friend and had a salad topped with shrimp, snack was the same as my morning smoothie. For dinner i had salmon with oven baked sweetpotato.

Yummylisious smoothie recipe:

  • 1 banana
  • 1/2 avocado
  • hand full spinach
  • 1 cup blackberry, raspberry, blueberry (i used frozen)
  • 1/2 cup strawberry (used fresh)
  • 1/2 cup coconut milk
  • 1 small knob ginger
  • 1 tsp green superfood mix (chlorella, wheatgrass, ginger)
  • 3/4 cup water

Blend and enjoy!!!!! For the part i saved for my afternoon snack i added 1 tbsp chiaseeds so it would be more creamy.

2015 Whole30 Day 1 completed :) Yaayyyy and a blueberry omelette recipe

After a long working weekend with little sleep, I slept close to 11 hours today and woke up at 11. I can’t eat right after waking up so I had brunch today 🙂

I am really excited to do this Whole30 again, I sure need it and eventhough I know it will be hard at times. I have done it so I know I can do this. If you are doing it too, so can you!

This is the yummy food I ate today!!!

  • Breakfast: Sweet blueberry omelette, fruit salad and a cup of tea.
  • Lunch: Shrimp Salad with olive oil and lemon dressing
  • Dinner: Meat sauce topped with lettuce
  • Snack: Nut mix

Breakfast omelette

  • 3 eggs
  • 1 tsp cinnamon
  • 1/2 tsp cardamom
  • 1/4 tsp real vanilla powder
  • 1/2 cup blueberries

Mix together everything but the blueberries, pour in a frying pan on medium heat then add the blueberries, after a 5-7 minutes flip the omelette and let it sit on low heat for another 3-4 minutes. Done and ready to be gobbled down 🙂

Banana Choco Cinnamon Pancakes!!!! OOOOHHHH sooo delicious

OOohhhhh wow this was super duper delicious!!!!!! I came home arround 19.30 and was hungry but didn’t feel like cooking anything heavy so I decided to make banana pancakes. What a great decision I made hahaha.

I just have to say how proud I am of myself these last two weeks. I’ve been training consistently. This week I went to the gym on tuesday and thursday. Wednesday I went out in the sunshine walking/jogging and tomorrow sunday I will go to the gym for some cardio. I am going slow taking it one step at the time. Want to get the consistency in, build a habit 😀

Let get to the really good stuff the pancakes. Stack of it!!!!! I think this is the best pancake recipe I have made so far. I didn’t measure but I will put down the estimates of it.

Recipe:

  • 2 eggs
  • 1 small banana
  • 1-2 tbsp almond milk
  • 1 tbsp hazelnut flour
  • 1 tbsp coconut flour
  • 2 tbsp cacao
  • 1/2 tsp cinnamon
  • Swirl of agave syrup

Directions:

Blend it all togehter in a mixer. If it is too dry add more almond milk or too runny add more coconut flour. Then fry it in coconut oil or butter. Serve with some raspberries, cacao nibs and chopped hazelnuts. ENJOYYYY!!!!

OOohhhhh wow detta var super duper gott!! Jag kom hem runt 19.30 och var hungrig, men hade inte lust att laga något tungt så jag bestämde mig för att göra bananpannkakor. Vilket bra beslut jag gjorde hahaha.

Jag måste bara säga hur stolt jag är över mig själv, de senaste två veckorna har jag tränat regelbundet. Den här veckan gick jag till gymmet på tisdag och torsdag. Onsdag gick jag ut i solskenet och promenerade / joggade och imorgon söndag kommer jag att gå till gymmet för lite konditionsträning. Jag tar det sakta ett steg i taget, vill att det ska bli en vana 😀

Jag kanske inte är där jag vill vara ännu, men jag gör det!! Yayyyyyy mig!

Nu övergår vi till det viktiga.. pannkakorna. En stapel av det!! Jag tror att detta är det bästa pannkakas recept som jag har gjort hittills. Jag mätte inte, men vet på ett ungefär.

Recept:

  • 2 ägg
  • 1 liten banan
  • 1-2 msk mandelmjölk
  • 1 msk hasselnöt mjöl
  • 1 msk kokosmjöl
  • 2 msk kakao
  • 1/2 tsk kanel
  • Swirl agave sirap

Gör så här:

Blanda allt  tillsammans i en mixer. Om den är för torr tillsätt mer mandelmjölk eller för rinnande lägg till mer kokosmjöl. Stek sedan den i kokosolja eller smör. Servera med lite hallon, kakao nibs och hackade hasselnötter. ENJOYYYY!!

Sweet and Savory Brunch

Wow this brunch was soooo delicious!!!! Had the perfect balance of sweetness and savory flavors that blended well together. Wish I had made more hahaha. People ask me how I find my recepies that I don’t create myself. A lot of times when I can’t figure out what to eat I search on google for recepies and inspirations. I always put PALEO infront of the search term to find paleo recepies. E.i. paleo breakfast or paleo chicken etc. I always find a lot of options to look through.

This morning I searched for paleo brunch and I found these two different recepies that looked so great I wanted to try them out. The first one was Strawberry Shortcake recepie and the second was Perfect Scrambled Eggs recepie where I found the Gordon Ramsey video. Easy to follow 🙂

Recipe:  

Strawberry Shortcake minus the strawberries since I didn’t have any 🙂

  • 16 ounces fresh strawberries (I used blackberries and blueberries)
  • 1-2 teaspoon honey (optional)
  • 2 cups blanched almond flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 3 tablespoons cold grass-fed butter or coconut oil
  • 2 large eggs
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract (I used 1/4 tsp since i used organic vanilla bean powder)
  1. Defrost berries and mix in a bowl together with honey.
  2. Preheat oven to 350°F (175°C).
  3. Line a sheet pan with some parchment paper or use silicone cupcake molds.
  4. In a large bowl, combine the almond flour, baking soda, and cinnamon. Using a fork or knife, cut the butter into the almond flour to form and mix, so that you’ve formed some small beads of the butter in the dough.
  5. In a separate bowl, whisk together the eggs, honey, and vanilla. Stir the wet ingredients into the dry.
  6. Using a spoon or measuring cup, drop the dough onto the sheet pan into 8 evenly sized cakes, leaving room in between each cake.
  7. Bake for 15–20 minutes until golden brown.
  8. Allow cakes to cool, then slice horizontally, and spoon some of the strawberry or berry mixture into the middle, and some extra on the side.

 

Perfect Scrambled Eggs

  • 3 eggs
  • Some butter or coconut oil
  • Salt and pepper
  • 2 large mushrooms
  • 2 handfull of spinach
  • 1 tomato
  1. Prior to placing the saucepan on the stove, crack the eggs into the saucepan and add the coconut oil to the saucepan as well.
  2. Place the saucepan on medium heat and start stirring so that the eggs get broken up.
  3. Keep stirring without stopping.
  4. Move the saucepan off the heat when you start to see some of the egg sticking a bit to the bottom of the saucepan. Keep stirring off the heat for about 10 seconds and then put it back onto the heat for another 20-30 seconds, but always keep stirring.
  5. Do this three or four times until you see that the mixture becomes more solid (but don’t wait until it’s actually solid!).
  6. Once the eggs have solidified a bit, take the pot off the heat permanently.
  7. Lastly, season with salt and pepper.
  8. Sautee the muschroom, spinach and tomato.
