Whole30 day 10-14 done.. still going strong :) New simple yummy recipe up!!!

Wow 2 weeks of my whole 30 has already passed and i am still going strong. It feels great to be eating clean, however i do miss having some paleo treats. So for my birthday coming up next month I will make a paleo party for my family and friends. I can’t wait 🙂

Went out dancing to a salsa club saturday with a few friends and it was fun, i am not used to wear heels anymore so my feet were killing me after a few hours hahaha. I love wearing heels so I guess I need to try to wear them more 😀 I must have missed the memo about it being a black/ white party. Almost every person in the club had a black or white top on hahaha. Oh and you can’t go out without taking the mandatory bathroom picture 😀

  • Breakfast: Spinach superfood coconut omelette
  • Lunch: Salad
  • Dinner: Parsnip, carrot, turnip mash with beef patties, lingonberries
  • Evening snack: Berry smoothie topped with buckwheat flakes, sunflower seeds, shredded coconut and walnuts

  • Lunch: Baked sweet potato with lemon dill butter oven baked salmon and salad
  • Snack: Banana and 1 egg
  • Dinner: Was not hungry so I had some smoothie

  • Lunch: Oven baked sweet potato, meat sause and a salad
  • Dinner: Ate out had a salad

  • Dinner: Sweet potato fries,  pork chop with garlic parsley butter and bearnaise sauce

  • Dinner: Scrambled eggs, sandwich turkey, sauteed spinach and 1/2 ruby grapefruit

  • 1 avocado
  • 1 cup blueberries and raspberries
  • 1 tbsp coconut oil

Blend and enjoy with toppings of your choice 🙂

Uh-oh this weekend was a challenge, but it’s ok.

The last few days I have been very busy and have not been able to post anything. I also deviated from the challenge, however I am back and I will not start over on day one but just continue a few more days instead 🙂

Last week was a challenge, I started a new job two weeks ago and there is so much to learn, and my head have been on overload hahaha. I also worked really late, and that I’m not used to. So I was kind of exhausted in my brain this weekend. On saturday I ended up eating at TGI Fridays had a burger with gluten free bun and a few fries, I also had 2 mojitos. And on yesterday on sunday I had nachos at my sisters house. My stomach ended up in so much pain after dinner yesterday it was still hurting this morning. I’m not going to punish myself for failing this weekend.. it is just getting back on the wagon again. Now 24 hours later my stomach is still hurting a little bit.

Today I had nut porridge topped with berries for breakfast and a purple green juice. For lunch and dinner I had taco pie i made last week 🙂

The nut porridge is delicious and simple to make, I found this recipe online it is in swedish. I just used less to have a smaller portion.

Nut porridge

  • 1 dl (0.4 cups) nuts ( i used almonds and cashews)
  • 1 tbsp flax seeds
  • 1 dl (0.4 cups) coconut milk
  • 1 msk water
  • 2 eggs
  • 1 banana
  • Cinnamon
  • Cardamom
  1. Put the nuts in a blender and mix the nuts until they are very small pieces.
  2. Put the eggs, banana coconut milk and water in a mixer and bled.
  3. Pour in the nuts and stir.
  4. Boil in a pot while you stir, until you’ve got the right consistency.
  5. Add the cinnamon and cardamom.
  6. Top with some berries. Enjoy!

Green Pineapple Smoothie + This is Christmas Show. Pics from my lovely sunday!

Had a fantastic day today. Started the day with a really tasty Pineapple Green Smoothie. Then by 11 went to the gym and had a cardio/ streching day. It felt great, and it was the 4th time this week I worked out 😀 After the gym came home and cooked some yummy foods to eat, before I got ready to go to see This is Christmas show that my church Hillsong Stockholm produced.

My morning pre-workout smoothie. I love these great smoothies so scrumptious and easy to make before the gym.

Green Pineapple Smoothie

Recipe:

  • Hand full of spinach
  • 1 small banana
  • 1/2 cup pineapple
  • 1 tbsp shredded coconut
  • 10 almonds
  • 1 tsp green superfood
  • 1 tsp hempprotein
  • 1/2 cup almond milk
  • 1/2 cup water

Directions:

Blend all together in a mixer well and enjoy!!!!!

My post-workout meal it consisted of oven baked sweet potato, egg, tuna cakes topped with tomato spinach sauce, sauerkraut and some fresh spinach. Yum yum yum!

I was really excited to see the x-mas show and I’m happy we came early. We were there 1 hour before the show started. Lucky us we were at the up front of the line, looking at the picture the line was looonnng. It was about 2000 people there. The show was magnificent and the vocals WOW, we have some really fantasticly talented people in my church. Hillsong Stockholm ❀ I loved loved loved the show!!!!!!

After we went to eat some food at Orkidé Thai Restaurant. I had a cheat day and mmmm it was really good! We all ordered the special plate with desert.

Mmmmm paleo breakfast hot cerial/ porridge & of course a smoothie too!

I have been MIA for a little bit. Have some things going on in my life and I was silly to eat oatmeal and ended up with severe stomach issues. Well at least I know I can’t eat oats anymore. And after that I came down with a little cold, most likley because my immunesystem was compromised after the stomach episode. I have also been in a brain fog for a little bit. It comes and goes, so I’m working on figuring out what is triggering it for me. It is at times very debilitating, makes me unable to think clearly or focus. So time on the computer has been limited.

I have a few posts coming up the next few days of the foods and goodies I have made the last few weeks. I love that I have become a foodie, food sometimes consumes my life hahaha. I tend to spend a lot of my days off to prep and cook for the day or 2, however I need to start making more big quantities to store in the freezer. I love love love breakfast it is my favorit meal of the day!!!! I made some really good paleo porridge and bluegreen smoothie today. Totally yummylisious!!!!!!!

Hot cerial/porridge

Recipie:

  • 2 eggs
  • 2 tbsp coconut flour
  • 2 tbsp buckwheet or almond flour
  • 1/2 cup almond milk or coconut milk
  • 1 tsp cinnamon

Directions:

Stirr it all together in a pot. Keep on stirring over medium heat till desired consistency. Serve with toping of your choice. I used homemade applesause.

Bluegreen Smoothie

Recipie:

  • 1 hand full spinach
  • 1-2 stems of kale
  • 1 banana
  • 1 cup of blueberries and blackberries
  • 1 1/2 cup water
  • 1 tsp hemp protein (optional)
  • 1 tsp green superfoods (optional)
  • Couple of almonds

Directions:

Blend it all togehter well in a blender, I used my nutri bullet. Love that little thing!!! Drink up!

Jag har varit borta frĂ„n webben ett tag. Har nĂ„gra saker som hĂ€nder i mitt liv och jag var dumt nog att Ă€ta havregrynsgröt och det slutade med allvarliga mag problem. Men nu vet jag Ă„tminstone att jag inte kan Ă€ta havre lĂ€ngre. Och efter det sĂ„ blev jag förkyld, troligtvis sĂ„ Ă€ventyrades mitt immunförsvar efter magen episoden. Jag har ocksĂ„ varit i en ‘hjĂ€rndimma’ eller brain fog ett tag. Det kommer och gĂ„r, sĂ„ jag jobbar pĂ„ att rĂ€kna ut vad som utlöser det för mig. Det gör mig oförmögen att tĂ€nka klart eller fokusera. SĂ„ tid pĂ„ datorn har varit begrĂ€nsad.

Jag har nÄgra inlÀgg kommer upp de nÀrmaste dagarna av de livsmedel och godsaker som jag har gjort de senaste veckorna. Jag Àlskar att jag har blivit en foodie, mat konsumerar ibland mitt liv hahaha. Jag tenderar att spendera en hel del av mina lediga dagar till prep och laga mat för dagen eller 2, men jag mÄste börja göra fler stora mÀngder för att förvara i frysen. I love love love frukost Àr min favorit mÄltid pÄ dagen!! Jag gjorde en riktigt bra paleo gröt och en blÄgrön smoothie idag. Riktigt yummylisious!!!

Gröt

Recept:

  • 2 Ă€gg
  • 2 msk kokosmjöl
  • 2 msk boveteflingor eller mandelmjöl
  • 1 dl mandelmjölk eller kokosmjölk
  • 1 tsk kanel

Gör sÄ hÀr:

Vispa ihop allt i en kastrull och koka upp pÄ mellan vÀrme, tills du fÄtt den konsistens du vill ha. Toppa med vad du tycker om, jag anvÀnde hemma gjord Àppelmos.

Smoothie

  • 1 handfull spenat
  • 1-2 stjĂ€lkar grönkĂ„l
  • 1 banan
  • 2-3 dl blĂ„bĂ€r och björnbĂ€r
  • 2-3 vatten
  • 1 tsk hampa protein (tillval)
  • 1 tsk green superfoods (tillval)
  • nĂ„gra av mandlar

Gör sÄ hÀr:

Blanda allt i en mixer, jag anvÀnde min nutri bullet. Mmmmm gott

Blueberry Blackberry Smoothie Bowl

Its starting to get really cold here, last night it was -1c or 30f. Brrrrrr I get cold very easily. I prefer sunshine and never below 20c or 70f 🙂 Thats what I loved when I lived I Los Angeles, it was warm most of the year with lots of sunshine.

I did not realize how much I am affected by sunshine. On monday it was sunny and I had energy and felt good on tuesday it was gloomy and rainy and I was tired the whole day lacking energy.  Then yesterday it was sunny again and I had lots of energy and my mood was great. Today again it is gloomy and I feel tired hahaha. So I have started to take D vitamins to see if that will help. I will report back in a few weeks.

Mmmmmmmmmmmmm I love smoothies I have them almost everyday. I tend to have a lot of different ingredients in my smoothies. Its a great way to get different nutrients in all at once 🙂

Recipe:

  • 1/2 can coconut milk
  • 1/2 cup almond milk
  • 1 cup blueberries and blackberries defrosted
  • 1 small banana
  • 1 tbsp almond butter
  • 1 tbsp cacao nibs
  • 1 tsp hemp protein (optional)
  • 1 tsp green superfood (optional)

Directions:

Put everything in a mixer, I use my nutri bullet. Put in a bowl add topping of your choice. I used coconut chips, chia seeds and sunflower seeds.

Det börjar bli kallt hĂ€r, i natt var det-1c eller 30F. BRRRRRR Jag fryser mycket lĂ€tt. Jag föredrar sol och aldrig under 20c eller 70f 🙂 Det Ă€r vad jag Ă€lskade nĂ€r jag bodde jag Los Angeles, det var det varmt större delen av Ă„ret med massor av solsken.

Jag insÄg inte hur mycket jag pÄverkas av solsken. I mÄndags var det soligt och jag hade energi ochallt kÀndes bra, pÄ tisdagen var det trist och regnigt och jag var trött hela dagen orkeslös. Sedan igÄr var det soligt igen och jag hade massor av energi och mitt humör var pÄ topp. Idag igen Àr grÄtt och jag kÀnner mig trött hahaha. SÄ jag har börjat ta D-vitaminer för att se om det hjÀlper. Jag kommer att rapportera tillbaka om nÄgra veckor.

Mmmmmmmmmmmmm Jag Ă€lskar smoothies jag har dem nĂ€stan varje dag. Jag tenderar att ha en massa olika ingredienser i mina smoothies. Det Ă€r ett bra sĂ€tt att fĂ„ mĂ„nga olika nĂ€ringsĂ€mnen pĂ„ en gĂ„ng 🙂

1 dl mandelmjölk

1 liten banan
1 msk mandel smör

1 tsk hampa protein (tillval)
1 tsk grön superfood (tillval)
