Whole30 day 6 and 7, week 1 done. And yes another recepie up :D

Hi 😀 i just found out one of my good friends got engaged. I am soooo happy for her/ them. They are so perfect for eachother. Love them both am looking forward for the wedding whenever that will take place. Nadia can’t wait to hear all the details 😉 I love when things are going great and fun and exciting things are happening to my friends. It brings me so much joy to see the people I love to do good. Have to share 2 beautiful pictures of them. You guys are an inspiration.

Today me and one of my friend went on a long walk with some hills and pushing a stroller about 7 km (4.4 miles), I was completely beat. But I had no time to take a nap before work. Just enough time to eat some lunch and prep my dinner. So I can’t wait for this workday to be over and go home and sleep.

Yesterday and today went by smoothly still have no sugar cravings, which is fantastic cause they suck hahaha. I decided to not have any cacao in anything I make just to make sure I don’t trigger any cravings. I live having cacao in my smoothies or bullet proof coffee. Yesterday I had a super yummy creamy smoothie for breakfast. I think I will make it tomorrow too.

Day 6:

  • Breakfast: Creamy berry smoothie with a side of 2 eggs
  • Lunch: A double meat minty burger with Zucchini “buns” and minty guacamole
  • Dinner: Cucumber sandwich stuffed with turkey sandwich meet, homemade mayo, salad and tomato
  • Snack: Leftover creamy smoothie from the morning, and bananas topped with almond butter, nuts and shredded coconut.

Day 7:

  • Breakfast: Sweet potato hash browns with bacon avocado and tomato
  • Snack: 1 banana
  • Lunch: Some more Sweet potatp hashbrowns with a salad shell stupped with turkey sandwich meat, homemade mayo, avocado and tomoto
  • Dinner: Even more Sweetpotato hashbrown with bacon and my blueberry coconut omelette (no greens this time) hehehe

Sweet Potato hash browns:

  • 1 medium sized sweet potato shredded
  • 2 medium – large eggs
  • 2 tbsp cinnamon
  • 1/2 tsp cardamom
  • coconut oil for frying

Shred the sweet potato, whisk the eggs with cinnamon and cardamom. Then mix in the shredded sweet potato well and fry on low to medium heat for about 5 minutes on each side, maybe longer depending on how thick the shreds or the hash browns are.

This may not look super yummy but it was very good 🙂 thats why I’m sharing the recipe 😀

Whole30 Day 2 completed…. Ohhh my a delisious burger recipe up!!!

Yayyy day 2 went by smoothly and I feel good. It’s bananas how it went from a nice summer day on monday the 31st to chilly fall on the 1st. And today was horrible rainy and windy. I’m not ready for fall yet.

Wowzer I had an amazing dinner today, tried something new and it was super delicious. I made some mint flavored burgers, with portobello mushroom ‘buns’ and minty guacamole. I will be having this for dinner tomorrow too, can’t wait mmmm. I have never had portobello mushrooms before and i was surprised on how good it tastes.

Day 2

  • Breakfast: 2 egg turkey spinach omelet and a banana blueberry blackberry smoothie
  • Lunch: Yesterday’s leftover dinner Jamaican run down.
  • Snack: 1 egg, 1 banana and 1/2 apple
  • Dinner: Portobello mint burger

Portobello mushroom mint burger with a minty guacamole

Recipe: Burger

  • 250g (0,5 lbs) ground beef
  • 1/2 chopped onion
  • 1 egg
  • 1 tbsp dried mint
  • 1 tsp paprika powder
  • 1 1/2 tsp cumin
  • 1 tsp tumeric powder
  • 1 tsp oregano
  • 1/2 tsp garlic powder
  • 1 tsp apple cider vinegar
  • 5 fresh mint leafs
  • 5-7 fresh thai basil leafs
  • salt
  • pepper

Mix it all together with your hands and make 4-8 patties. Place in a medium hot skillet 5 minute each side.

Guacamole

  • 1 avocado
  • 1 clove garlic
  • 1 lime
  • 1 tsp dried mint

Mix together

Portobello bun

Either grill or pan fry the portobello mushroom for about 15 minutes.

Silky Chocolate Mousse Recipe :D

I was sick for over 1 week so I stopped the whole30. I will not resume but start over. Either this monday or the following. I know you don’t have to start on a monday, but it helps when counting the weeks and days 🙂

Oh la la I really needed something sweet this evening and I wanted something that was fast too. So I made this 4 ingredients chocolate mousse, that is so silky and smooth. Super duper yummy I want more hahaha.

Silky Chocolate Mousse recipe:

  • 1 banana
  • 2 tbsp coconut milk
  • 2 tbsp unsweetened cacao
  • 1 fresh date

Put it in a mixer, mix it together and enjoy it. MMmmmmmmm

Paleo Tuna Cakes + smoothie bowl & hot and cold salad

Today I have just been home relaxing feeling the brain fog clouding my mind. I’m trying to push through it. I don’t want it to take overrrrr hahaha. I wanted to be creative today, yet I have not been able to focus at all, just tired it the head. And this dark no sun weather isn’t healping.

But I didn’t let that stop me from making some good food 😀 Yum Yum Yum I started my day with a purple smoothie bowl, an egg and a cup of tea with dried mint leafs honey and coconut oil; for lunch I had a hot and cold salad with some banana topped with almond coco cacao butter on the side. For dinner I made these delicious Tuna Cakes topped with mashed sweet potato and sauerkraut!!!!! This was soooo darn good, I might be biased since I made it 😀

Breakfast ~ Purple Smoothie Bowl

Recipe:

  • Hand full of spinach
  • 1 cup with raspberries, blackberries, blueberries
  • 1 banana
  • 1/2 cup water
  • 1 tsp hempprotein powder
  • 1 tsp Green superfoods

Directions:

Mix it all together poor it in a bowl and att toppings of your choice. I used unsweetened coconut chips, cacao nibs, crushed flaxseeds and buckwheet.

Lunch ~ Hot and Cold Salad

Recipe:

Cold ingredients:

  • Spinach
  • Shredded Carrot
  • Shredded Beetroot

Hot ingredients:

  • Zucchini
  • Mushrooms
  • Coconut oil/ Butter

Directoins:

Stir fry the zucchini and mushrooms in either butter or coconut oil. Meanwhile shred the carrot and beetroot. Layer spinach on the bottom, then shredded veggies, then the stir fried veggies. I topped it with homemade garlic mayo. Soooooo delicious!!! I had a side of sliced banana topped with almond coconut cacao butter and cacao nibs. That really hit the spot, just saying 😀

Dinner ~ Paleo Tuna Cakes with Sweetpotato Mash

Recipe:

  • 1 can tuna
  • 2 eggs
  • 1 tbsp dijon mustard
  • 2 tbsp coconut flour
  • 1 tbsp ramsons
  • dashes of sweet chilli powder
  • black pepper
  • sea salt
  • coconut oil/butter
  • sweetpotato

Directions:

Put the oven on 400f pierce the sweetpotato with a fork or a knife several times before puting in the oven. I have mine in for 1 1/2 to 2 hours depending on the size. Take out and let cool for a little bit.

Whisk the eggs with a fork add mustard and all the seasonings blend, add the tuna mix. Then lastly add the coconut flour and mix well with your hands. Make 8-10 patties, let sit for 5 minutes while the fryingpan becomes hot on medium heat. Add coconut oil or butter then fry the patties 3-4 minutes on each side. While frying mash the sweetpotato, I used 1/2 of a potato since they are big. I mixed in some coconutoil and seasalt with the sweetpotato. I plated mine on a bed of spinach and topped it with sauerkraut. Oh my this was gooood!!!!

 

 

Mmmmm paleo breakfast hot cerial/ porridge & of course a smoothie too!

I have been MIA for a little bit. Have some things going on in my life and I was silly to eat oatmeal and ended up with severe stomach issues. Well at least I know I can’t eat oats anymore. And after that I came down with a little cold, most likley because my immunesystem was compromised after the stomach episode. I have also been in a brain fog for a little bit. It comes and goes, so I’m working on figuring out what is triggering it for me. It is at times very debilitating, makes me unable to think clearly or focus. So time on the computer has been limited.

I have a few posts coming up the next few days of the foods and goodies I have made the last few weeks. I love that I have become a foodie, food sometimes consumes my life hahaha. I tend to spend a lot of my days off to prep and cook for the day or 2, however I need to start making more big quantities to store in the freezer. I love love love breakfast it is my favorit meal of the day!!!! I made some really good paleo porridge and bluegreen smoothie today. Totally yummylisious!!!!!!!

Hot cerial/porridge

Recipie:

  • 2 eggs
  • 2 tbsp coconut flour
  • 2 tbsp buckwheet or almond flour
  • 1/2 cup almond milk or coconut milk
  • 1 tsp cinnamon

Directions:

Stirr it all together in a pot. Keep on stirring over medium heat till desired consistency. Serve with toping of your choice. I used homemade applesause.

Bluegreen Smoothie

Recipie:

  • 1 hand full spinach
  • 1-2 stems of kale
  • 1 banana
  • 1 cup of blueberries and blackberries
  • 1 1/2 cup water
  • 1 tsp hemp protein (optional)
  • 1 tsp green superfoods (optional)
  • Couple of almonds

Directions:

Blend it all togehter well in a blender, I used my nutri bullet. Love that little thing!!! Drink up!

Jag har varit borta från webben ett tag. Har några saker som händer i mitt liv och jag var dumt nog att äta havregrynsgröt och det slutade med allvarliga mag problem. Men nu vet jag åtminstone att jag inte kan äta havre längre. Och efter det så blev jag förkyld, troligtvis så äventyrades mitt immunförsvar efter magen episoden. Jag har också varit i en ‘hjärndimma’ eller brain fog ett tag. Det kommer och går, så jag jobbar på att räkna ut vad som utlöser det för mig. Det gör mig oförmögen att tänka klart eller fokusera. Så tid på datorn har varit begränsad.

Jag har några inlägg kommer upp de närmaste dagarna av de livsmedel och godsaker som jag har gjort de senaste veckorna. Jag älskar att jag har blivit en foodie, mat konsumerar ibland mitt liv hahaha. Jag tenderar att spendera en hel del av mina lediga dagar till prep och laga mat för dagen eller 2, men jag måste börja göra fler stora mängder för att förvara i frysen. I love love love frukost är min favorit måltid på dagen!! Jag gjorde en riktigt bra paleo gröt och en blågrön smoothie idag. Riktigt yummylisious!!!

Gröt

Recept:

  • 2 ägg
  • 2 msk kokosmjöl
  • 2 msk boveteflingor eller mandelmjöl
  • 1 dl mandelmjölk eller kokosmjölk
  • 1 tsk kanel

Gör så här:

Vispa ihop allt i en kastrull och koka upp på mellan värme, tills du fått den konsistens du vill ha. Toppa med vad du tycker om, jag använde hemma gjord äppelmos.

Smoothie

  • 1 handfull spenat
  • 1-2 stjälkar grönkål
  • 1 banan
  • 2-3 dl blåbär och björnbär
  • 2-3 vatten
  • 1 tsk hampa protein (tillval)
  • 1 tsk green superfoods (tillval)
  • några av mandlar

Gör så här:

Blanda allt i en mixer, jag använde min nutri bullet. Mmmmm gott
